Gose bier vindt zijn oorsprong in Duitsland in het gebied van de rivier de Gose. De fermentatie ontstond door wilde gist. Tegenwoordig wordt Gose gebrouwen met een speciaal soort gist en melkzuur, ook voegt men er o.a. zout aan toe.
